Mare e Monti: A Five-Course Italian Wine Dinner
Mare e monti — “sea and mountains” — is an Italian culinary expression for bringing the flavors of the water and the land together at one table.
For Adelina's next wine dinner, that contrast becomes the inspiration for five courses and five Italian wines. The journey begins at Lake Garda, where vineyards grow between the lake and the foothills of the Alps, before moving through the rolling hills of Collio, Tuscany and Valpolicella.
The menu follows the landscape. Smoked octopus, bottarga and sable fish bring the mare, paired first with bright, mineral-driven northern Italian whites. As the evening progresses, the monti emerges through richer, earthier flavors of veal, cranberry beans and sage, alongside Brunello di Montalcino and Amarone della Valpolicella.
The evening closes with panna cotta, macerated berries and Franciacorta.
